Meet the Chef

San Diego native Nick Paulerio brings a passion for diverse cuisine to his role as Executive Chef. Since launching his career in 2006, he has honed his skills at esteemed establishments like The Fishery, Storyhouse Spirits and The Lodge at Torrey Pines. At Borrego, Chef Paulerio oversees menu development and trains his team, focusing on creating exceptional dining experiences that reflect California's rich culture.
